It seems to be non-linear voltage metering. If you knew function of conversion Y(X) it would not be a problem. You have to use not X as a voltage but X as an ADC output code.
If you want to use the look-up table, some intermediate points between points of table might be lost or you must use an linear or other interpolation from point to point. It is not as simple decision as using of the function Y(X).
